My daughter came over to my house this week to help me build my simple grape arbor for the old Concord grapevine my father planted. I had accidentally cut it down pretty far, but it continues to grow, even though Dad's arbor fell down and left the vine without support. I invited her to have lunch with me before we began working on the arbor, but didn't have much time to plan an exotic meal. I found a couple of packages of salmon in my freezer with a recipe on the back that I thought would be quick and good, Salmon Dinner Parcels. It was a success with a nice salad and a loaf of frozen bread dough that I thawed, let rise and baked. In fact, she is going to buy some salmon this week and have it on hand for when she needs a quick meal! A couple of weeks ago, my two cousins and I drove to our other cousins home in Indiana to go into Chicago to the Art Institute to see a couple of exhibits. I had made some Buttermilk Cheddar Drop Scones with Lemon Curd and took most of them with us to have with breakfast before catching the train into Chicago. After buying an expensive jar of lemon curd that I didn't care for at all, I went back to making my own. I've included the recipe that really isn't that difficult to prepare and is so easy to keep and serve. The scones can be frozen and the lemon curd is best after sitting in the refrigerator for a couple of weeks. We sure hope your summer is full of fun activities and not all work.
